Food for Thought Week 8: The Tomato!

Hi everyone, we hope you've had a great week.  We've been waiting for this week to arrive, it's tomato time.

So many foods center around tomatoes, and that's a good thing, they really have multiple health benefits.

For starters, they're a great source of potassium.  So much so, however, that we sometimes have to caution some of our patients who are prone to have high potassium levels to hold off a bit less their levels go too high.

They are also a great source of lycopene, one of nature's great antioxidants that has been linked to a decreased risk of cancer, and has even been shown to act like a "sunscreen" to limit how much UV damage is done to the skin from sunlight.

Cooking the tomatoes with a little oil (go for olive) brings out the lycopene even more.
